Oof, I'm sure there are loads I could (and probably will...) come up with, but I really like this one because in it, the character looks almost exactly like I always imagined the original figure (I never "agreed with" the illustrations).

And here's another favorite - stumbled across it in another corner of the forum but think it should really find a place here. I loved that scene, both on Sherlock and in the original (I firmly believe it's supposed to be what I call the "epic laugh" in "The Sign of the Four"):

Yes, I love that one too (the picture of Sherlock looking in through a cafe window at John, who is seated inside).

 

Did we ever see it in Series 3, though?  Or was it just a publicity shot?  I was looking forward to that scene....

Looks like it's the cover photo on the Series 3 music CD, as well.  I think it does capture the overall mood of the series pretty well, just odd that it doesn't seem to be actually in the show.  Maybe it was a deleted scene?
